Ingredients

Instructions

1. Prepare the Pie Crust:

  • In a food processor, combine the flour and salt.
  • Add the cold butter and pulse until the mixture resembles coarse crumbs.
  • Gradually add the ice water, a tablespoon at a time, until the dough comes together.
  • Turn the dough out onto a lightly floured surface, shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  • Heat the olive oil or butter in a large skillet over medium heat.
  • Add the diced onion and cook until softened and translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the sliced mushrooms and thyme. Cook until the mushrooms are browned and have released their moisture, about 8-10 minutes.

  • Pour the mushroom filling into the pie crust.
  • Roll out the remaining dough for the top crust, or create a lattice pattern if you prefer.
